Bamboo rice (known as Mulayari in Malayalam, Moongil rice in Tamil) is well known for its nutritional and medicinal values. Apparently, the bamboo plant flowers after 12 years and these have in them the bamboo seeds. And this is what is referred to as bamboo rice.
Diabetic patients can use Bamboo rice instead of normal rice because the Glycemic Index (GI) of Bamboo rice is lesser than normal rice. Bamboo rice is pungent, sweet, strong, and nutritious, with a wheatlike taste and is comparatively much richer in protein.
Cooking instructions: Please note that Bamboo rice needs to be soaked in water for 5-6 hours before cooking. It will not easily get cooked like normal rice.
Usage: Along with other usage of normal rice, it can be used for delicacies like payasam, sweet balls and puttu.
