Why do brown eggs cometimes loose colour?

Sometimes in the eggs that you buy from us, you might see that it has lost its brown colour which may instill a lot of questions inside you. Well we assure you that there is nothing to worry about. This is just a natural process that takes place with our eggs. We will explain below how the process takes place.

Protoporphyrin is the pigment which is responsible for the colour that is present on the brown eggs. This brown pigment is formed on the eggs during the last stage of the formation of the egg shell and the bloom before the egg is ready to be hatched.  Also known as the cuticle, The bloom is the natural coating or covering on the eggshell that seals the eggshell pores. The bloom helps to prevent bacteria from getting inside the shell and reduces moisture loss from the egg. In nature, the bloom dries and flakes off.


In some of the eggs, the brown pigment in the eggs can be rubbed off as soon as it is laid. Some of the brown eggs might loose colour during the boiling as well. This happens especially in water that contains vingar where the water causes a chemical reaction that can allow some of the color to be removed.
