Chakotha is a seasonal, naturally grown leafy green that's deeply rooted in traditional South Indian and North Indian cooking. Also known as Bathua in Hindi and Chakothne Soppu in Kannada, it grows wild in the winter and early monsoon seasons on organic farms and forest edges.
