This rare first quality Wayanadan Matta variety is short bold, semi polished and boiled.

Grown in a 20-acre paddy farm in Muthanga, Wayanad, Kerala, Adukkan is a traditional tall variety of Kerala red rice. Due to lodging issues, many farmers have switched to shorter varieties, making this superior, slightly sweet rice a rarity. It is among the finest Kerala boiled rice varieties, with 60% bran retained. Best enjoyed as plain rice with meals.

These are 60% semi polished and boiled rice.

Interesting fact :

This rice is said to be the tastiest of all Matta rice varieties. The tribal communities grow it in small amounts for their own consumption.

Cooking instruction :

- Submerge rice fully in water

• The ratio of rice to water can be 1:4-5

• Generally should be done with 4 pressure cooker whistles

- Drain the water after cooking

Recipes :

This is best consumed as plain rice or as rice porridge. It can also be powdered and is a good option as red rice flour.
