Traditional Indian greens- Dill leaves (Part 3)

Number three on this traditional Indian greens series is the all-time favourite, sabaki or dill leaves. It is grown, and popular in not only India, but also across the world. 

Health benefits

It has so many medicinal benefits that have been used for more than 2,000 years. 

  • Great anti-flatulant and antioxidant properties
  • A good breath freshener
  • Reduces cholesterol levels
  • A great source of iron, magnesium, sodium, potassium, proteins and carbohydrates.

Dill leaves are popularly added to soups, salads and even palyas for its strong aroma and taste. Here’s another simple recipe, everyone’s favourite, crispy and crunchy dill leave pakoras!

  • Wash and roughly chop 1 cup dill leaves. Mix it with one chopped onion and 2 green chillies, 1 tsp ginger garlic paste and salt. Leave aside for 10 minutes. 
  • Mix 1 cup besan or chickpea flour with ¼ cup rice flour, 1/4tsp turmeric powder and fennel seeds, 1 tsp red chilli powder and a pinch of baking soda in another bowl. 
  • Add the flour mixture to the onion mixture to get a bread-crumb like mixture. Add little water, if necessary, to get a crumbly dough.  
  • Heat oil for deep frying and drop spoonfuls of the pakoras. Fry on medium heat while turning the pakoras once or twice. Remove and enjoy with chutney or sauce and hot coffee or tea!
