The process of making Natural/ Organic Heeng (asafoetida). These are not certified organic since currently as per organic standards, there is no provision to certify heeng for anyone in the market.
Typically starting from the resin obtained from the root of Ferula species plants.
Step of the Heeng Making process:-
1.Collection of Resin: Organic Heeng is derived from the resinous gumobtained mainly from the roots of Ferula species, particularly Ferula assafoetida. The plant is typically grown in dry, mountainous regions.
2.Extraction: The resin is extracted from the roots by making deep cuts intothe living roots of the plant. These cuts encourage the exudation of resin, which is then collected.
3.Fermentation: The collected resin is traditionally placed in earthenware jars and mixed with a small amount of water. This mixture undergoes a fermentation process, usually lasting for several months. During this time, theresin undergoes chemical changes that enhance its flavor and reduce its strongodor.
4.Drying: After fermentation, the semi-solid mass is sun-dried into a solidform. This drying process further concentrates the flavors and allows the resinto harden.
5.Grinding: The dried resin is then ground into a fine powder. This powder is commonly sold and used in cooking.
6.Mixing: Sometimes, the powdered Heeng is mixed with a starch, such as wheat flour or rice flour, to prevent clumping and make it easier to sprinkle or use in cooking.
7.Packaging: The final powdered Heeng is packaged and distributed for sale.
