After I have studied on the value of raw foods and the harmful effect of cooking my heart no longer wants to roast the peanuts in 120C till it turns into brown. Brown is the sign of burning. Especially knowing how toxic is peanuts in general and particularly after roasting i changed my peanut butter production style. I make sure our peanuts are organic, and fresh, get them tested for aflotoxin presence and then just heat them enough so that we can remove the skin easily.
Nearly now 6 years passed since i turned into raw foodist and a promoter of the same i produce my peanut butter in this fashion, cream or half white in colour.
