Merwin explains the reason below:Savera Naturals Choco-Dry Fruit Laddus contain roasted whole cacao beans instead of cocoa powder. The whole cacao beans are packed with natural cacao butter, which is extracted to make cocoa powder. If you grind roasted whole cacao beans unlike roasted coffee beans they don't become powder but turn into a thick liquid because of the cocoa butter in them.That's why our Choco-Dry Fruit laddus have the buttery taste and texture. In colder weather like we are experiencing now or during winters the cacao butter hardens and shows up as white patches on the laddus. Sometimes people confuse it with white fungus and think they are spoilt. But there's nothing to spoil in these laddus - no coconut, no oil, no ghee; they only contain dry fruits, dates and roasted ground cacao beans. If you taste the white spot itself, you will immediately know it's hardened cacao butter and not fungus.Note from farmerFarmer Merwin says, "Same Cacao beans that we are using in Ragi-Cacao laddus. Not processed chocolate. We have planted around 200 cocoa plants. But these are yet to start yielding. Currently we buy unroasted Cacao beans from Chempotty Estate, a certified organic farm.
