Peppery, crispy mustard greens is one of the most nutritious green-leafy vegetables with high levels of vitamin A, carotenes, vitamin K, and flavonoid anti-oxidants.
Cooking: Can be cooked like any greens (spinach or amaranthus) and alsomixes well with ham, pork and bacon. Fresh tender mustard greens can be eaten raw in salads and can be juiced with other greens and vegetables, though it has a pungent, peppery flavor
Storing: Mustard leaves wilt soon if kept at room temperature; therefore, place mustard greens in a plastic bag / zip pouch, removing as much of the air from the bag as possible. Store in the refrigerator and consume within two to three days.
