Endosperm(middle layer) contains mostly protein and carbohydrates along with small amounts of B vitamins, iron, soluable fiber; germ inner layer is a rich source of trace minerals, unsaturated fats, B Vit, antioxidanrs, phytochemicals and a minimum amount of high quality protein.
