Here is a yummy gluten-free, refined sugar free coconut cake flavoured with strawberry Recipe by ThangamIngredients:
- For Batter
- 1 and 1/2 Cup of Coconut Flour
- 1 and 1/2 Cup of Coconut Milk
- 1/2 Cup of Coconut Oil
- 7 Tablespoons of Honey
- 4 Egg Whites
- 8 Whole Eggs
- 2 Teaspoons of Baking Powder
- 1/2 Teaspoon of Salt
- 5 Teaspoons of Cocoa Powder
- For Filling
- Organic Strawberry Preserve/Jam
- For Icing
- 4 Large Sweet Potatoes
- 7 Tablespoons of Honey
- 4 Tablespoons of Peanut Butter
- 3 Teaspoons of Cocoa Powder
Procedure:
- Batter
- Sift Together Coconut Flour, Baking Powder and Salt in a bowl (make sure you sift them at least 2 times)
- In another bowl, whisk together wet ingredients, Coconut Oil, Eggs, Egg Whites, Organic Raw Honey and Coconut Milk, make sure they are at room temperature, whisk until Eggs are fully blended
- Stir together Dry and Wet Ingredients, Keep stirring until there are no lumps
- Bake at 180C for 30/35minutes
- Sweet Potato Frosting: Peel Sweet Potatoes and Cut them into small cubes
- Boil Sweet Potatoes
- After Sweet Potatoes are done, Blend them together with Peanut Butter, Honey and Cocoa until Creamy
