About Recipe:
Here is a Pineapple Gojju, which is a typical Karnataka preparation, especially during weddings or special occasions.Ingredients:
- For the masala –
- 1 teaspoon coriander seeds
- 2 teaspoons urad/ black gram dal
- ¼ teaspoon fenugreek seeds
- 2-4 dry red chillies (Byadagi)
- ¼ teaspoon asafoetida
- 1 tablespoon desiccated coconut
- 3 tablespoons fresh coconut
- Water as needed for grinding
- For the Gojju –
- 1 cup pineapple cubes/ dices
- 1 tablespoon oil
- ¼ teaspoon mustard seeds
- ¼ teaspoon cumin seeds
- A pinch of turmeric
- Salt according to preference
- 1 tablespoon tamarind extract
- 1-2 tablespoons jaggery powder
- 1 ½ cups water
Procedure:
- For the masala-
- In a pan, dry roast the coriander seeds, urad dal, fenugreek seeds, red chillies until they’re done.
- Add the asafoetida, desiccated coconut, fry until the coconut turns light brown.
- Cool this mixture and grind with the fresh coconut, with a few splashes of water, to a smooth paste.

- For the gojju-
- In a pan, heat the oil, add the mustard seeds and let them crackle
- Add the cumin, turmeric, and tip in the pineapple pieces
- Add some water, salt, and let the pineapple pieces cook down
- Add tamarind extract, jaggery powder, more salt as needed, the remaining water, and the ground paste
- Let it simmer on a low flame for about 12 minutes
- Serve hot with rice or rotis
