Roasted Red Bellpepper Tomato Soup Recipe

About Recipe:
An oven roasted soup, super simple to make. Made with Organic Red peppers and tomatoes sourced from #healthybuddhaorganic. Tangy, creamy and for a change second serving was whole heartedly licked by my kiddos.Ingredients:
- 2 red bell pepper
- 3 hybrid medium tomatoes
- 4 to 5 garlic cloves
- black pepper
- Handful of fresh parsley or Italian Basil
- 1 medium onion thinly sliced
- 1 to 2 tbsp Olive oil
Procedure:
- Preheat oven at 180 C
- Cut the bell peppers into medium slicer. Take the seeds out
- Cut tomatoes into half and remove the seeds
- In a baking sheet ( put baking paper), put bell peppers and tomatoes, drizzle olive oil, salt, black pepper, chopped garlic and toss them well with a spoon
- Bake for 25 mins, take out the peel of both tomatoes and bell peppers. Add chopped basil or parsley . May add little more oil
- Bake for another 10 mins until peppers are tender
- Let it cool down, blend well in a grinder
- In a pan, add vegetable stock or water and let it simmer for 10 mins. Add pepper to taste
- Goes well with a dollop of basil pesto
